<p>For twenty years, Dan O’Brien struggled to make ends meet on his cattle ranch in South Dakota. But when a neighbor invited him to lend a hand at the annual buffalo roundup, O’Brien was inspired to convert his own ranch, the Broken Heart, to buffalo. Starting with thirteen calves, “short-necked, golden balls of wool,” O’Brien embarks on a personal journey that returns buffalo to his land for the first time in more than a century and a half.</p>
<p>Buffalo for the Broken Heart is at once a tender account of the buffaloes’ first seasons on the ranch and an engaging lesson in wildlife ecology. Whether he’s describing the grazing pattern of the buffalo, the thrill of watching a falcon hone in on its prey, or the comical spectacle of a buffalo bull wallowing in the mud, O’Brien combines a novelist’s eye for detail with a naturalist’s understanding to create an enriching, entertaining narrative.</p></div>

<p>The fascinating and wide-ranging history of vanilla, from the sixteenth century to today</p>
<p>Vanilla is one of the most expensive of flavorings—so valuable that it was smuggled or stolen by pirates in the early days—and yet it is everywhere. It is a key ingredient in dishes ranging from crème brûlée to Japanese purin. It is the quintessential ice cream flavor in the United States. Eric T. Jennings explains how the world’s only edible orchid, originally endemic to Central America, became embedded in the international culinary and cultural landscape.</p>
<p>In tracing vanilla’s rise, Jennings describes how in the 1840s an enslaved boy named Edmond Albius discovered a way to pollinate vanilla orchids with a toothpick or needle—an ingenious process that is still in use. This method transformed the vanilla sector by enabling the plant to be grown outside of its natural range. Jennings also looks at how the vanilla craze led to the search for now‑pervasive substitutes, and how a vanilla lobby has fought back. He further unravels how vanilla—the world’s most expensive crop and once considered its most refined fragrance—came to mean “bland.”</p>

<p>Borderlands: Recipes and Stories from the Rio Grande to the Pacific transports you to this region, with more than 125 recipes and nearly 300 photographs from every part of the border.</p>
<p>Shaw&#8217;s approachable recipes include tried-and-true standards like Fish Tacos, Chimichangas, and Carne Asada, unusual border specialties like Discada, Mollejas, and Empalmes, vegetarian standouts like Caldo de Queso, Cactus Salad, Nopales Navegantes, and Mushroom Tacos, as well as deeply personal dishes like the Death Bed Taco, a life-changing taco made for him by a dear friend on his birthday years ago.</p>
<p>It also features an array of wild food recipes and techniques for using the surprisingly rich natural bounty of the borderlands, from mesquite to wild greens to native pine nuts, Texas ebony beans, cholla, and beyond. Hunters and anglers will love how prominently game features in border cuisine, and Borderlands includes visual icons to help cooks mix and match various types of wild and domesticated meat, fish and fowl.</p>
